Pumpkin deservedly located in the center of the autumn and winter table – it is useful and nutritious.
Of course you can eat it fresh. But how many surprisingly tasty and fragrant desserts can be made from pumpkin. We picked up the 5 most interesting pumpkin desserts.
1. Pumpkin roll with curd cream
To make the sponge cake, you will need 100 grams of pumpkin puree, 3 eggs, 100 grams of sugar, 120 grams of flour, 1 tsp of baking powder, a pinch of cinnamon. For the filling, take 200 grams of cottage cheese, 100 grams of sour cream, 100 grams of sugar. Decoration may need to taste whipped cream and icing sugar.
Beat eggs and sugar into foam, gently mix pumpkin puree and sifted flour, add baking powder. Pour the dough on a baking sheet and bake at 180 degrees for 15 minutes. The resulting cake hot roll with a kitchen towel into a roll. Beat cottage cheese with sour cream and sugar in cream. Unroll the cooled roll, remove the towel, brush with cream and wrap again. Let it soak, decorate with cream and powder.
2. Autumn dessert from pumpkin and cranberries
For the preparation of the first layer of parfait, you must take half a pumpkin puree, 1 teaspoon of cinnamon, 2 tablespoons of honey. Second layer – a glass of cranberries and a quarter cup of honey. And the third layer – 200 ml of cream, icing sugar to taste. Leave some cranberries for decorating and prepare some walnuts, also for serving.
Prepare the pumpkin puree and chill whisk in a blender with honey and cinnamon. Separately, whip the cranberries with honey. Prepare the third billet – whip the cream with the powder. Lay the dessert layers in a transparent glass or ice-cream bowl and garnish with berries and nuts.
3. Pumpkin brownie
Take 100 grams of butter, 200 grams of chocolate, 1 cup of sugar, 2 cups flour, 3 eggs, a glass with a quarter of pumpkin puree, a quarter cup of vegetable oil, half a teaspoon of ground cinnamon, a teaspoon of baking powder, a pinch of salt.
Melt butter and chocolate in a steam bath or in the microwave. Mix flour, baking powder, salt and ground cinnamon separately. Beat eggs and sugar in a bowl and mix with the dry mixture. In the third of the test, add pumpkin puree, in the rest of the mixture of cream and chocolate. Pour the dough layers into a baking dish – the first chocolate and creamy, the second pumpkin and the third again chocolate and creamy, paint a marble drawing with a toothpick. Bake at 180 degrees for 40 minutes. Cut into squares and serve to the table!
4. Pumpkin and Chocolate Dessert
Take 400 grams of pumpkin, 3 teaspoons of powdered sugar, a teaspoon of honey, 2 tablespoons of flour, 1 egg yolk, 1 tablespoon of starch, a pinch of cinnamon, 50 grams of dark chocolate, 50 ml of cream 35%.
Pumpkin peel and cut. Steam it, cool and whisk in a blender to a puree. Mix flour and starch, add one and a half tablespoons of water and pound. In the mashed pumpkin, add salt, powder, honey, yolk and cinnamon, mix. Steam the mixture.
Crush the chocolate, cover with boiling cream and stir until smooth. Fill the cups or ice-cream pan with cooled layers – pumpkin and chocolate.
5. Pumpkin Cheesecake in Jars
You will need to prepare 150 grams of chocolate biscuits, 80 grams of butter, 450 grams of cream cheese, 250 grams of pumpkin puree, 3 eggs, 150 grams of brown sugar, 1 tablespoon of starch, half a teaspoon of ground cinnamon and ginger, nutmeg and salt – on a pinch.
For the base, crush the cookies into crumb and mix with melted butter. Take 150 ml heat-resistant jars and place the base on the bottom. Mix the cream cheese, pumpkin puree, eggs, sugar, spices, starch and salt – put in jars with the second layer. Preheat the oven to 165 degrees, put the jars in a container with water and bake for an hour.
Do not take out the jars immediately, after baking, open the oven slightly and allow the jars to cool for an hour, then cool them at room temperature, and then put them in the refrigerator. Before serving, decorate the dessert with crumbs and ground cinnamon.
